Couscous- crumbed Trout portions
1 tsp dried dill
1 cup, 200g couscous
1 cup, 250ml Hot water
2 Tbsp olive oil
1 jumbo egg
2 trout portions
Salt and lemon pepper to taste
Add Hot water to couscous, stir and leave for 7 minutes. Stir again and add olive oil until the couscous is loose.
Mix dill, lemon pepper, salt and couscous together
Dust trout portions with flour and dunk in egg.
Coat with couscous mix
Place on baking sheet and cook for 15 – 20 minutes or until cooked through.
Served with potato wedges and Greek salad with Avocado
