Cold smoked trout with Mango salsa and Rocket leaves on a Bruschetta
1 Mango, diced
½ red onion finely chopped
1 Jalapeno chilli minced (seeds make it hotter)
1 small cucumber peeled and diced (1 cup)
3 Tbsp fresh flat leaf parsley leaves chopped
1 plum tomato diced
60ml Orange juice
3 Tbsp fresh lime juice
Salt and pepper
200g Cold Smoked Trout or Cold smoked Salmon.
Cut a bruschetta in slices, drizzle with olive oil and bake for 7 minutes.
Place a Rocket leave and a piece of trout on the bruschetta and add a teaspoon of the mango salsa.
Lovely with cocktails!
