Breakfast cups

small2017Salmon and egg breakfast cups:

Ingredients:
200g Scansa Trade smoked salmon
6 eggs
Cream cheese
20g of chives chopped finely
Paprika
Parmesan

Method:
Grease a muffin pan and line it out with the cold smoked salmon
Add one teaspoon of cream cheese to each salmon cup, then crack open one egg in each cup. Add some chives, a pinch of paprika and sprinkle with parmesan cheese.
Preheat the oven the oven on 180 degrees.

Bake for about 12 minute if you prefer a soft egg, otherwise bake a bit longer.
Makes 6 cups

Salmon and spinach breakfast cups:

Ingredients:
200g Salmon slices
Scrambled egg mix – 3 eggs and a dash of milk
1 finely sliced red onion
Mixed herbs
Olive oil
100g spinach shredded
1 – 2 blocks of Herbed Feta

Method:
Grease a muffin pan and line it out with the cold smoked salmon
Sauté the onion and spinach in a frying pan with a bit of olive oil. Turn off the heat and add the feta, mix well.
Spoon the mixture into the salmon cups.
Preheat the oven the oven on 180 degrees.
Bake for 15 minutes or until cooked through.

Makes 6 cups
